The History of Recipes
Written cooking instructions as a concept can be observed back into the far past, in truth as far as the ancient Egyptians, and maybe further still. Interesting though that maybe, in the main part, these ancient records were just very simple pictorial recipes for preparing meals.
The truth of the matter is, the oldest recipe discovered, according to Professor Solomon Katz, are some stone tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful and exhilarated. As we move into Roman times 25BC a man called Apicius compiled a collection of documents detailing recipes enjoyed by wealthy roman citizens. In his scrolls, he describes how the meals of wealthy Romans were split into hors d`oeuvre, main meal and dessert, a very modern way of dining. Aspicius informs us how the ancient chefs made use of a wide range of spices and herbs, including a few that will be familiar to modern chefs such as basil, rue and parsley. As we move on, there are a couple of recipe books published in the 14th Century : a recipe book titled `Forme of Cury`, and another, similary called `Curye on Inglish`. Surprisingly, these have no connection with the curry that we all know today, but rather recipes for the types of meals prepared for the rich and wealthy people of that period. Later, in the fifteenth century, the Crusaders brought back a variety of foods and spices from the holy lands, such as coriander, parsley, basil and rosemary. These new herbs and spices prompted an explosion in publications on food, the majority of which still exist in private libraries. The revolution that is television brought us TV cooks and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting us all to search through thousands of recipes just like those on this site. |
