The History of Recipes
Historians have proved the existence of recipes far back into ancient history, in fact as far back into history as ancient Egypt, and maybe further still. Interesting though that maybe, these, ancient cookbooks were just basic hieroglyphic or cunieform instructions for preparing food.
Progressing into The time of the romans around 25BC a roman called Apicius created a number of documents describing recipes enjoyed by the Romans. In his scrolls, he recounts how the meals of wealthy Romans were separated into hors d`oeuvres, main course and afters, a style of dining still practiced today. He also recounts how the ancient cooks were skilled in the use of a good variety of aromatic flavors, including many that are still in use today such as bay, fennel and dill. During the next few hundred years, the families of Europe competed with each other to serve the most exotic meals, and consequentially chefs and their recipes were at a premium. Even so, it wasn`t until the nineteenth century that formal cookery and recipe collections became popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted much of their lives to collecting, trying out, and recording the recipes that were being prepared for the better households. By the advent of the 1900s, cookbooks were in high demand, mostly as a result of better eduction, leisure time and having more money to spend. |
