The History of Recipes
Written recipes as a concept can be tracked far back into the far past, certainly as far back as the early Egyptians, and maybe further still. In practice though, these, old cookbooks were just very basic hieroglyphic instructions for food preparation.
Fascinatingly, the oldest recipe discovered so far, according to experts is a collection of clay tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `blissful`. Progressing into The time of the roman empire around 25BC a roman called Apicius created some documents describing recipes cooked by wealthy Romans. In his publication, he tells us how the meals of wealthy Romans were separated into starters, entrees and dessert, something we still use today. Additionally, he informs us how the ancient Romans used a good variety of herbs and spices, including a few you will know such as bay, rue and dill. In the 15th century, people returning from the crusades brought back many foods, spices and herbs from middle-east cuisine, including coriander, parsley, basil and rosemary. The introduction of these new culinary ideas was responsible for an outbreak in recipe publications, most of which are now in academic collections. By the arrival of the twentieth century, cookbooks are in high demand, due to higher levels of literacy, people having more leisure time and disposable income. The introduction of television gave us cooking programs and the spin-off recipe books. Which brings us neatly to the present day and the invention of the internet, permitting everyone to search through thousands of recipes such as those found on our web site. |
