The History of Recipes
It is quite possible to track the history of written cooking instructions back into distant history, in fact as far back into history as ancient Egypt, and maybe even further. However, in the main part, these early recipes were just simple pictorial recipes for preparing food.
Progressing into The time of the romans around 25BC a Roman scholar, called Apicius, assembled some scrolls showing how to cook the recipes enjoyed by wealthy roman citizens. He describes how the meals of wealthy Romans were separated into starters, entrees and desserts, something we still use today. Aspicius also tells us how the Roman cooks made use of many different herbs and spices, including a few that are still present in modern kitchens such as bay, fennel and parsley. During the next few hundred years, the wealthy families of Europe strove to serve the most exotic meals, and as a result chefs and their collection of recipes became highly prized. Nevertheless, it was during the 1800s that fine cooking and recipe books really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated years of their lives to collating, verifying, and recording popular recipes of the day. Like it or not, the introduction of TV brought us TV chefs and the recipe books that accompanied them. Which brings us neatly to the present day and the invention of computers and the internet, permitting everyone to search through massive numbers of recipes like those on our web site. |
