Ingredients
1 cup plain yogurt
1 cup sour cream
1/3 cup chopped fresh coriander
1 tsp minced hot green chili or jalapeno, pepper
3/4 tsp pepper
1/2 tsp salt
Directions
In small bowl, combine yogurt, sour cream, coriander, chili pepper,
pepper and salt. Cover and refrigerate for 4 hours or up to 24

The History of Recipes
Written cooking instructions as an idea can be tracked way back into distant history, at least as far back as the Egyptians, and maybe further still. However, mostly, these old cook books were just simple pictorial, hieroglyphic or cunieform instructions for preparing meals.
In an interesting twist, the oldest recipe discovered so far, according to experts is a series of stone tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `wonderful`. Later on, in The time of the romans 25BC a roman called Apicius assembled a number of documents detailing recipes cooked by wealthy Romans. In his scrolls, Apicius describes how the roman meals were split into hors d`oeuvre, entrees and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also informs us how the ancient chefs were skilled in the use of many different aromatic flavours, including many that are still in use today like thyme, rue and parsley. Moving our culinary historical trip onwards, there were two recipe books from the 14th Century ; a recipe book called `Forme of Cury`, and another, similary called `Curye on Inglish`. Surprisingly, these are nothing to do with the spicy food that is served today, but instead descriptions of the types of meals prepared by the chefs of the nobility of the period. Later on, in the 15th century, knights returning from the crusades brought back many foods, spices and herbs from middle-east cuisine, including basil and coriander. These new herbs and spices prompted a surge in cookery books, some of which are kept safe in academic collections. When we get to the 20th century, cookery publications were in great demand, due to higher levels of literacy, more leisure time and disposable income. |
