Ingredients
2 1/2 cup water
2 tsp salt
4 tbsp butter
1 pinch white pepper
1 cup fine yellow cornmeal
1 cup buttermilk
5 eggs
1/3 cup cream
1 cup corn kernels
1 cup diced red bell peppers
1/2 tsp crushed chiltepin (little
1 red chili

Directions
1. Bring the water, salt, butter and white pepper to a simmer.
Slowly add the cornmeal and continue to simmer stirring until it is
very thick and coats the bottom of the pan, about 5 minutes.
2. Preheat the oven to 400 degrees F. Beat in the remaining
ingredients and pour into a greased 9xI2-inch baking dish. Bake until
set and browned, 30 to 45 minutes. Garnish each serving with chopped
cilantro. Hint: Any leftovers can he cooled and used as a stuffing

The History of Recipes
It is quite possible to trace the history of recipes far back into the far past, in fact as far into history as early Egypt, and possibly even further than that. In practice though, these, early cookbooks were just very basic hieroglyphic recipes for preparing meals.
During Roman times 25BC a roman called Apicius created a number of documents showing how to cook the recipes cooked by wealthy Romans. In his publication, he tells us how the meals of wealthy Romans were split into hors d`oeuvres, main meal and afters, a style of dining still practiced today. This early Roman chef informs us how the cooks of Roman times were skilled in the use of many spices, including some that we all recognise for example basil, rue and parsley. In the fifteenth century, people returning from the crusades brought us a variety of foods and herbs from Arab cuisine, such as basil and rosemary. The introduction of these new tastes created an explosion in manuscripts on cookery, many of which are now in academic collections. Like it or not, the introduction of television gave us TV chefs and the demand for the accompanying recipe books. Which brings us neatly up to date and the invention of the internet, allowing everybody to access thousands of recipes like the ones you can find on this web site. |
