The History of Recipes
It is quite feasible to trace the history of written cooking instructions far back into antiquity, certainly as far back into recorded history as early Egypt, and possibly even further. Interesting though that is, mostly, these early cookbooks were just primitive hieroglyphic or cunieform instructions for food preparation.
Interestingly, the oldest recipe found, according to experts is a series of stone tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated. As we move into The time of the romans 25BC a roman called Apicius wrote some documents detailing recipes enjoyed by wealthy Romans. In his works, he describes how the meals were separated into hors d`oeuvres, main course and desserts, something that is very familiar to us today. This early Roman chef recounts how the cooks of Roman times made use of many different aromatic flavors, including some familiar names for example bay, rue and parsley. During the next few hundred years, the powerful and wealthy houses competed to serve the most extravagent meals, and as a result chefs and their collection of recipes became highly prized. However, it wasn`t until the nineteenth century that fine cooking and recipe publications became really popular. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated the best years of their lives to collating, trying out, and writing down recipes of the day. Like it or not, the introduction of TV gave us TV cooks and the demand for the accompanying recipe books. Which brings us neatly up to date and the internet revolution, allowing everybody to search through massive numbers of recipes like those on sites such as this. |
