The History of Recipes
Recipes as an idea can be found far back into the distant past, certainly as far as early Egypt, and quite possibly further than that. In practice though, generally, these early recipes were just primitive hieroglyphic recipes for meal preparation.
Later on, in The time of the romans 25BC a roman called Apicius created a few documents detailing recipes prepared by wealthy Romans. In his works, Apicius tells us how the meals of wealthy Romans were split into starters, main course and desserts, a very modern way of dining. Aspicius tells us how the ancient Romans were skilled in the use of many different spices and herbs, including a few that will be familiar to modern cooks such as bay, fennel and asafoetida. Over the succeeding few centuries, the upper classes competed to lay on the most exotic meals, and consequentially the best cooks and their recipes were greatly in demand. Notwithstanding that, it was during the nineteenth century that fine cooking and cookery books reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, spent years to collating, testing, and publishing popular recipes of the day. When we get to the 20th century, cookbooks were highly popular mostly as a result of better eduction, more leisure time and being a little richer. |
