The History of Recipes
Food historians have tracked the existence of recipes back into history, certainly as far into history as ancient Egypt, and maybe even further. Having said that, generally, these old cook books were just basic pictorial instructions for meal preparation.
Fascinatingly, the oldest recipe discovered so far, according to Professor Solomon Katz, are some ancient tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful. As we move into The time of the roman empire 25BC a man called Apicius compiled a few scripts describing recipes cooked by the Romans. In his works, he tells us how the roman meals were separated into hors d`oeuvre, main course and afters, something that is very familiar to us today. He also informs us how the cooks of Roman times made use of many different herbs, including a few that will be familiar to modern chefs like basil, mint and parsley. In the 15th century, the Crusaders brought back many foods and herbs from middle-east cuisine, including spices such as coriander, parsley, and basil. These new foods and spices prompted a torrent in manuscripts on cooking, some of which are now in private libraries. By the arrival of the twentieth century, recipe publications are in high demand, mostly as a result of higher levels of literacy, increased leisure time and being a little richer. The introduction of television brought us cooking programs and the recipe books that accompanied them. And that neatly brings us to the present day and the invention of the internet, allowing everybody to search through massive numbers of recipes like those on the site you are now reading. |
