The History of Recipes
It is possible to track the history of meal recipes far back into distant history, in fact as far back as the Egyptians, and quite possibly further than that. Having said that, sadly, these ancient records were just simple hieroglyphic instructions for food preparation.
Fascinatingly, the oldest recipe in existence, according to Professor Solomon Katz, is a series of tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful and blissful. Progressing into The time of the romans 25BC a man called Apicius created a few documents detailing recipes cooked by the Romans. In his scrolls, he tells us how the roman meals were divided into hors d`oeuvre, main course and dessert, a style of dining still practiced today. This early Roman chef tells us how the Romans used a good variety of herbs and spices, including a few you will know for example bay, rue and asafoetida. As our culinary historical trip moves to more modern times we have some recipe books published in the fourteenth century : one book called `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Don`t be fooled by the titles though, these are unconnected to the indian food that is popular today, but instead accounts of the types of food enjoyed by the rich people of the time. In the 15th century, knights returning from the crusades brought us many foods and spices from Arab countries, including coriander, parsley, basil and rosemary. These new culinary innovations prompted a torrent in recipe publications, many of which are now in private cookery archives. The introduction of television brings us TV cookery programs and the demand for the spin-off recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting everyone to access thousands of recipes such as those found on our web site. |
