The History of Recipes
Transcribed cooking instructions as an idea can be tracked way back into the distant past, at least as far back into history as the early Egyptians, and maybe further still. However, mostly, these early cook books were just very basic pictorial recipes for food preparation.
As we move into The time of the roman empire around 25BC a man called Apicius assembled a few documents describing recipes prepared by wealthy Romans. In his publication, Apicius tells us how the meals were separated into appetizers, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he tells us how the ancient cooks made use of a wide range of herbs, including a few that will be familiar to modern chefs for example bay, rue and asafoetida. Over the following few centuries, the powerful families of the West competed with each other to offer the most exotic banquets, and as a result the best cooks and their recipes increased in prestige. Even so, it was during the nineteenth century that fine cooking and cookery books became really popular. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated years of their lives to assembling, verifying, and publishing the recipes of their peers. When we get to the 1900s, recipe books are in great demand, due to increased literacy, people having more leisure time and a general increase in wealth. |
