The History of Recipes
It is actually possible to trace the history of written cooking instructions way back into the far past, at least as far back into recorded history as the Egyptians, and possibly even further. Interesting though that maybe, generally, these ancient records were just primitive hieroglyphic or cunieform instructions for food preparation.
Progressing into Roman times 25BC a man called Apicius created a number of documents showing how to cook the recipes enjoyed by the Romans. In his works, Apicius tells us how the roman meals were separated into hors d`oeuvre, entrees and desserts, something we still use today. This early Roman chef describes how the Roman cooks used many different aromatic flavours, including a few you will know such as thyme, fennel and dill. Later on, in the 15th century, knights returning from the crusades brought us a variety of spices and herbs from the East, including spices such as parsley and basil. The introduction of these new herbs and spices prompted an outbreak in books on cookery, most of which are now in private libraries. When we get to the twentieth century, cooking publications are greatly in demand mostly due to increased literacy, more spare time and having more money to spend. |
