The History of Recipes
Recipes as an idea can be found way back into distant history, certainly as far back into history as the Egypt of the Pharoahs, and maybe further still. However, generally, these old cook books were just very basic hieroglyphic instructions for food preparation.
In an interesting twist, the oldest recipe discovered, according to Professor Solomon Katz, are a few ancient tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `blissful`. Later on, in The time of the romans 25BC a roman called Apicius compiled a collection of documents detailing recipes enjoyed by wealthy roman citizens. In his scrolls, Apicius recounts how the roman meals were split into appetizers, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef recounts how the ancient chefs made use of many aromatic flavours, including a few that are still present in modern kitchens such as basil, rue and asafoetida. Later on, in the 15th century, knights returning from the crusades brought back a variety of foods and spices from the holy lands, including parsley and basil. These new foods and spices led to a torrent in recipe manuscripts, the majority of which are kept safe in academic collections. When we get to the 20th century, cookery publications were highly popular as a result of better eduction, more leisure time and being a little richer. The arrival of TV brings us TV cooks and the demand for the spin-off recipe books. Which brings us neatly up to date and the internet revolution, permitting us all to search through thousands of recipes like the ones you can find on our site. |
