The History of Recipes
Experts have tracked the existance of recipes back into antiquity, in truth as far into history as ancient Egypt, and maybe further still. Having said that, these, early cookbooks were just very basic pictorial instructions for meal preparation.
Later on, in Roman times 25BC a man called Apicius compiled a collection of scripts which described recipes enjoyed by his fellow Romans. In his scrolls, he tells us how the roman meals were divided into starters, entrees and desserts, something that is very familiar to us today. Aspicius recounts how the ancient chefs made use of many different aromatic flavors, including a few you will know like basil, fennel and asafoetida. In the fifteenth century, the Crusaders brought back many new spices and herbs from Arab countries, including basil and coriander. These new culinary innovations led to a surge in recipe books, some of which still exist in academic collections. By the arrival of the 1900s, cooking books were increasing in popularity mostly due to more people being able to read, people having more leisure time and disposable income. |
