The History of Recipes
It is quite possible to track the history of transcribed cooking instructions way back into the far past, at least as far back as the early Egyptians, and possibly even further than that. Interesting though that is, in the main part, these old cook books were just primitive hieroglyphic or cunieform recipes for preparing food.
The truth of the matter is, the oldest recipe found, according to experts are a few ancient tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated and blissful. As we move into Roman times around 25BC a roman called Apicius assembled a collection of scripts detailing recipes cooked by wealthy roman citizens. In his works, he describes how the meals were separated into appetizers, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also describes how the chefs of Roman times used a wide range of herbs and spices, including some familiar names such as bay, rue and parsley. Moving on, we have two recipe books from the 14th Century ; a recipe book published under the title `Forme of Cury`, and another titled `Curye on Inglish`. The titles are somewhat misleading tho`, these two books are not about the indian curry that is served today, but rather descriptions of the types of food on the tables of the nobility of those days. Later, in the 15th century, knights returning from the crusades brought back many foods, spices and herbs from the East, such as rosemary and coriander. These new foods and tastes created a torrent in recipe books, some of which still exist in academic collections. Like it or not, the introduction of TV brings us TV cookery programs and the spin-off recipe books. Which brings us neatly to the present day and the internet revolution, allowing everybody to search through thousands of recipes just like those on our web site. |
