The History of Recipes
It is quite possible to prove the history of transcribed cooking instructions way back into distant history, at least as far into history as the Egyptians, and possibly even further. Having said that, in the main part, these ancient cookbooks were just basic pictorial, hieroglyphic or cunieform recipes for food preparation.
The truth of the matter is, the most ancient recipe found, according to experts is a collection of stone tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `exhilarated, wonderful and blissful`. As we move into Roman times around 25BC a man called Apicius created some documents showing how to cook the recipes prepared by wealthy Romans. In his scrolls, Apicius recounts how the meals of wealthy Romans were split into hors d`oeuvre, main course and afters, a style of dining still practiced today. He also recounts how the Roman cooks were skilled in the use of many different herbs and spices, including many that are still in use today such as bay, rue and parsley. Later, in the 15th century, knights returning from the crusades brought back many new foods and spices from the East, including basil and coriander. These new foods and tastes prompted a torrent in manuscripts on cookery, many of which are now in private collections. The revolution that is television brings us celebrity TV chefs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the internet revolution, permitting us all to access massive numbers of recipes like those on our site. |
