Ingredients
2 cup all prupose flour
1/2 tsp salt
3/4 cup quick oats
3/4 cup dark brown sugar, packed
3/4 cup white sugar
1 cup salted butter, softened
2 large eggs
2 tsp pure vanilla extract
1 cup (4 oz) chopped pecans
1 cup (6 oz) semisweet chocolate chips
Directions
Preheat oven to 300 In medium bowl combine flour, soda, salt and
oats. Mix well with wire whisk and set aside. In large bowl blend
sugars with an electric mixer at medium speed. Add butter and mix to
form a grainy paste. Scrape down sides of bowl, then add eggs and
vanilla. Beat at medium speed until light and fluffy. Add the flour
mixture, pecans, and chocolate chips, and blend at low speed just
until combined. Do not overmix. Drop dough by rounded tablespoons
onto ungreased cookie sheets, 1 1/2 inches apart. Bake for 20-22
minutes. Immediately transfer cookies with a spatula to a cool flat
surface.

The History of Recipes
Written cooking instructions as an idea can be observed far back into the distant past, certainly as far into history as ancient Egypt, and maybe further still. Interesting though that maybe, mostly, these old cook books were just primitive hieroglyphic recipes for food preparation.
Progressing into Roman times 25BC a roman called Apicius created a collection of scripts describing recipes cooked by his fellow Romans. In his works, Apicius tells us how the roman meals were divided into hors d`oeuvres, main course and afters, a very modern way of dining. He also tells us how the Roman cooks used many herbs and spices, including some that we all recognise like bay, fennel and asafoetida. Over the succeeding few hundred years, the upper classes competed with each other to lay on the most exotic meals, and as a result the best cooks and their recipes were at a premium. Even so, it wasn`t until the nineteenth century the formal cooking and cookery books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to collating, verifying, and writing down recipes to allow everyone to enjoy them. When we get to the twentieth century, cookery books are in high demand, mostly due to increased literacy, people having more spare time and having more disposable income. |
