Ingredients
2 tbsp lard
1 onion
3 lb beef,coarse grind
3 garlic cloves
4 tbsp red chile,hot,ground
4 tbsp red chile,mild,ground
2 tsp cumin,ground
3 cup water
1 1/2 tsp salt
Directions
1. Melt the lard, butter, or drippings in a large heavy pot over
medium heat. add the onions and cook until they are translucent.
2. Combine the meat with the garlic, ground chili, and cumin. Add this
meat-and-spice mixture to the pot. Break up any lumps with a fork and
cook, stirring accasionally, until the meat is evenly browned.
3. Stir in the water and salt. Bring to a boil, then lower the heat
and simmer, uncovered, for about 2 1/2 to 3 hours, stirring
occasionally, until the meat is very tender and the flavors are well
blended. Add more water if necessary. Taste and adjust seasonings.

The History of Recipes
Academics have found proof that recipes existed back into history, in fact as far back into history as the early Egyptians, and maybe even further. Interesting though that is, sadly, these old records were just very simple hieroglyphic recipes for food preparation.
Interestingly, the most ancient recipe in existence, according to Professor Solomon Katz, is a series of ancient tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `wonderful`. Later on, in Roman times 25BC a man called Apicius compiled a few scripts showing how to cook the recipes enjoyed by the Romans. He recounts how the meals of wealthy Romans were separated into appetizers, main meal and desserts, something that is very familiar to us today. Aspicius describes how the Roman chefs were skilled in the use of a wide range of spices and herbs, including some familiar names such as basil, rue and asafoetida. During the succeeding few centuries, the wealthy families of Wesstern Europe strove to serve up the most exotic banquets, and as a consequence, chefs and their collection of recipes were highly sought after. However, it was during the 19th century the formal cooking and recipe publications became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to assembling, testing, and writing down recipes for their fellow cooks to enjoy. By the arrival of the 1900s, recipe publications are greatly in demand mostly due to more people being able to read, leisure time and being a little richer. Like it or not, the introduction of television brought us TV chefs and the accompanying recipe books. And that brings us to the present day and the invention of computers and the internet, allowing us all to access massive numbers of recipes just like those on this site. |
