The History of Recipes
We can trace the history of meal recipes back into antiquity, in fact as far as the Egypt of the Pharoahs, and potentially, even further back. Having said that, these, early cookbooks were just primitive hieroglyphic or cunieform recipes for preparing meals.
In fact, the most ancient recipe discovered so far, according to Professor Solomon Katz, is a collection of stone tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful and blissful. Later on, in Roman times around 25BC a man called Apicius assembled some documents showing how to cook the recipes prepared by the Romans. In his scrolls, he tells us how the roman meals were divided into starters, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius tells us how the early Romans used a wide range of spices, including many that are still in use today like bay, mint and asafoetida. For the next few years, the powerful families of Europe strove to lay on the most extravagent banquests, and because of this the best chefs and their recipes were highly sought after. Notwithstanding that, it was during the nineteenth century that fine cookery and cookery books rose to prominence. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated their lives to assembling, testing, and recording recipes that were common in the better off homes of the day. By the advent of the twentieth century, recipe publications were starting to become popular as a result of higher levels of literacy, people having increased leisure time and being a little richer. |
