The History of Recipes
Academics have traced the existence of recipes far back into ancient history, in truth as far back as the early Egyptians, and maybe further still. In practice though, generally, these ancient records were just basic hieroglyphic or cunieform instructions for meal preparation.
Fascinatingly, the most ancient recipe found, according to experts is a collection of clay tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated. Progressing into The time of the romans 25BC a roman called Apicius compiled some scripts which described recipes cooked by his fellow Romans. In his publication, Apicius recounts how the meals were separated into hors d`oeuvre, main course and desserts, a very modern way of dining. This early Roman chef tells us how the early Romans made use of a good variety of spices, including some that we all recognise for example bay, rue and parsley. In the 15th century, people returning from the crusades brought us many new foods, spices and herbs from the East, including coriander, parsley, basil and rosemary. These new culinary innovations caused a torrent in recipe books, most of which are now in private collections. Over the next few centuries, the rich and powerful families of the West tried to offer the most exotic banquets, and as a result the best cooks and their collection of recipes became highly prized. Notwithstanding that, it wasn`t until the nineteenth century that cookery and recipe books rose to prominence. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated years of their lives to collecting, testing, and writing down the recipes of their peers. The introduction of television gave us celebrity TV chefs and the accompanying recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting everybody to search through massive numbers of recipes such as those found on this web site. |
