The History of Recipes
It is possible to track the history of written recipes back into antiquity, in fact as far back into history as ancient Egypt, and possibly even further than that. However, mostly, these early cook books were just basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
In fact, the most ancient recipe in existence, according to academics are a few tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel blissful. Later on, in The time of the roman empire 25BC a roman called Apicius created a few scripts describing recipes cooked by the Romans. In his scrolls, he recounts how the meals were split into appetizers, main course and dessert, something we still use today. Aspicius describes how the cooks of Roman times used many different aromatic flavors, including a few that will be familiar to modern cooks like bay, mint and dill. For the decades that followed, the families of Europe competed with each other to lay on the most exotic banquets, and because of this chefs and their recipes increased in prestige. Nevertheless, it was during the nineteenth century that haute cuisine and recipe books became popular. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated their lives to assembling, trying out, and publishing recipes to allow everyone to enjoy them. By the time we get to the 1900s, cookbooks were in high demand, mostly due to higher levels of literacy, leisure time and a general increase in wealth. The arrival of television gave us cooking programs and the accompanying recipe books. And that brings us to the present day and the internet revolution, allowing everybody to search through thousands of recipes like those on sites such as this. |
