The History of Recipes
Recipes as a concept can be found way back into the distant past, at least as far into history as pharonic Egypt, and potentially, even further back. Interesting though that is, these, ancient records were just very simple hieroglyphic instructions for food preparation.
In an interesting twist, the oldest recipe found, according to academics are some stone tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful. Progressing into Roman times 25BC a man called Apicius assembled a few documents detailing recipes cooked by the Romans. In his scrolls, he recounts how the meals of wealthy Romans were divided into starters, entrees and dessert, a style of dining still practiced today. Aspicius describes how the cooks of his times were skilled in the use of many herbs, including a few that will be familiar to modern cooks such as bay, fennel and dill. Continuing our culinary historical journey, there are some recipe books which were published in the fourteenth century ; a cookery book titled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Despite their titles, they are nothing to do with the indian food that is popular today, but instead descriptions of the types of meals on the menus of the nobility of that time. Later on, in the 15th century, the Crusaders brought back many foods and spices from the Middle-East, including spices like basil and coriander. The introduction of these new culinary ideas led to a surge in recipe manuscripts, many of which are kept safe in academic collections. Over the succeeding few centuries, the powerful families of the West competed to offer the most extravagent banquests, and as a result the best chefs and their recipe collections were much in demand. However, it was during the 1800s that fine cookery and recipe collections reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted much of their lives to collating, verifying, and publishing the recipes that were being prepared for the better households. When we get to the twentieth century, recipe books are in great demand, as a result of increased literacy, people having increased spare time and having more disposable income. The TV revolution brought us TV cookery programs and the demand for the spin-off recipe books. And that brings us to the present day and the invention of computers and the internet, allowing everyone to access massive numbers of recipes like the ones you can find on this web site. |
