The History of Recipes
It is quite feasible to trace the history of written cooking instructions back into ancient history, at least as far as the Egypt of the Pharoahs, and possibly even further. Interesting though that maybe, mostly, these old records were just basic pictorial recipes for preparing food.
Progressing into Roman times around 25BC a roman called Apicius created some scripts describing recipes cooked by wealthy Romans. In his publication, Apicius tells us how the roman meals were split into hors d`oeuvre, main meal and dessert, a style of dining still practiced today. He also informs us how the Romans made use of a wide range of spices and herbs, including some familiar names for example bay, fennel and dill. Later on in the 1400s, people returning from the crusades brought back many foods, spices and herbs from the holy lands, including coriander, basil and rosemary. These new culinary innovations prompted an explosion in manuscripts on food, many of which still exist in academic collections. By the advent of the twentieth century, cookbooks are in high demand, due to better eduction, people having more spare time and having more money to spend. |
