The History of Recipes
Recipes as a concept can be observed far back into distant history, in fact as far as the ancient Egyptians, and potentially, even further back. Interesting though that is, in the main part, these old recipes were just simple pictorial, hieroglyphic or cunieform recipes for preparing food.
Fascinatingly, the most ancient recipe in existence, according to food historians is a series of clay tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated and blissful. Progressing into The time of the roman empire around 25BC a roman called Apicius wrote a collection of documents showing how to cook the recipes prepared by the Romans. In his works, he describes how the meals of wealthy Romans were divided into hors d`oeuvres, entrees and dessert, something that is very familiar to us today. He also informs us how the ancient Romans were skilled in the use of many spices and herbs, including some that we all recognise like basil, rue and dill. In the 15th century, people returning from the crusades brought back many new spices and herbs from Arab cooking, including spices like coriander, parsley, and basil. These new foods and tastes caused a surge in recipe publications, some of which are now in academic collections. Over the following few centuries, the powerful and wealthy strove to lay on the most exotic banquets, and as a consequence, the best chefs and their recipes were at a premium. However, it wasn`t until the 1800s that haute cuisine and recipe publications rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to collating, testing, and writing down recipes that were common in the better off homes of the day. When we get to the 1900s, cookbooks are starting to become popular mostly due to more people being able to read, people having increased leisure time and having more money to spend. The arrival of TV gave us celebrity TV chefs and the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, permitting everyone to access massive numbers of recipes like the ones you can find on this site. |
