The History of Recipes
Historians have found proof that recipes existed back into the far past, in truth as far back into history as the Egyptians, and potentially, even further back. In practice though, sadly, these early records were just basic pictorial instructions for preparing food.
Later on, in Roman times 25BC a man called Apicius created a few documents which described recipes enjoyed by his fellow Romans. In his scrolls, Apicius recounts how the meals were separated into appetizers, main course and desserts, something we still use today. Additionally, he recounts how the Roman chefs made use of a good variety of aromatic flavours, including many that are still in use today for example bay, rue and asafoetida. During the succeeding few hundred years, the rich families of Wesstern Europe tried to serve up the best banquets, and as a result the best chefs and their recipe collections were at a premium. Notwithstanding that, it was during the nineteenth century the formal cooking and recipe books reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated the best years of their lives to collecting, trying out, and recording the recipes of their peers. By the arrival of the 1900s, cooking publications are increasing in popularity due to increased literacy, people having increased leisure time and having more disposable income. |
