The History of Recipes
Academics have tracked the existence of recipes far back into antiquity, in truth as far back into recorded history as the early Egyptians, and potentially, even further back. Interesting though that is, in the main part, these old cook books were just very basic hieroglyphic or cunieform instructions for preparing food.
Progressing into The time of the romans 25BC a roman called Apicius wrote a number of scripts which described recipes enjoyed by wealthy Romans. In his works, he describes how the meals were separated into starters, entrees and afters, a style of dining still practiced today. Aspicius also describes how the ancient Romans were skilled in the use of a wide range of aromatic flavours, including a few that will be familiar to modern cooks for example bay, rue and dill. Over the next few centuries, the powerful and rich houses tried to serve the most exotic banquets, and consequentially the best chefs and their recipes were much in demand. However, it was during the 1800s that cooking and recipe collections became popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to assembling, trying out, and publishing the recipes of their peers. By the arrival of the twentieth century, cook books are increasing in popularity due to better eduction, people having increased leisure time and having more money. |
