The History of Recipes
We are able to read the history of meal recipes back into distant history, certainly as far into history as early Egypt, and quite possibly further than that. Interesting though that is, mostly, these early records were just primitive hieroglyphic recipes for preparing meals.
As we move into The time of the romans around 25BC a Roman scholar, called Apicius, assembled some scrolls describing recipes cooked by the Romans. In his works, he describes how the meals were separated into appetizers, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef describes how the Roman cooks used many different aromatic flavours, including many that are still in use today such as basil, mint and dill. During the next few centuries, the wealthy families of Europe competed with each other to lay on the most extravagent meals, and as a result the best cooks and their recipes were greatly in demand. However, it was during the 1800s that fine cooking and cookery books really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to assembling, trying out, and recording the recipes that were being prepared for the better households. The revolution that is television brought us cooking programs and the demand for the accompanying recipe books. And that brings us to the present day and the internet revolution, permitting everyone to access thousands of recipes like those on sites such as the one you are reading now. |
