The History of Recipes
It is possible to trace the history of written recipes back into antiquity, certainly as far back as ancient Egypt, and maybe further still. In practice though, sadly, these ancient recipes were just very basic pictorial, hieroglyphic or cunieform instructions for food preparation.
Fascinatingly, the most ancient recipe found, according to Professor Solomon Katz, are a few ancient tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `wonderful`. As our culinary historical trip moves on a few more years there were two interesting recipe books published in the 14th Century ; a recipe book published under the title `Forme of Cury`, and another, similary named `Curye on Inglish`. The titles are somewhat misleading tho`, these books have no connection with the indian food that is familiar to us all today, but rather accounts of the types of meals on the menus of the wealthy. Over the following few hundred years, the upper classes tried to serve up the most extravagent banquests, and as a result cooks and their recipe collections were highly sought after. However, it wasn`t until the 19th century that haute cuisine and recipe books really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated their lives to assembling, verifying, and publishing recipes to help cooks of their time. By the arrival of the 20th century, cookery books are starting to become popular as a result of increased literacy, people having more free time and being a little richer. |
