The History of Recipes
We are able to follow the history of written recipes way back into ancient history, in fact as far back into history as the Egyptians, and maybe even further. However, in the main part, these ancient recipes were just simple pictorial instructions for preparing meals.
The truth of the matter is, the most ancient recipe discovered so far, according to experts is a collection of tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated. Later on, in The time of the roman empire around 25BC a man called Apicius created a collection of scripts showing how to cook the recipes enjoyed by the Romans. In his publication, he tells us how the meals were split into hors d`oeuvre, main meal and afters, a style of dining still practiced today. Additionally, he recounts how the ancient cooks made use of many aromatic flavors, including some familiar names such as thyme, rue and asafoetida. Later, in the fifteenth century, knights returning from the crusades brought us a variety of foods, spices and herbs from middle-east cuisine, including spices such as coriander, parsley, basil and rosemary. These new herbs and spices prompted an explosion in manuscripts on food, many of which still exist in private collections. By the time we get to the 1900s, cooking publications are greatly in demand due to higher levels of literacy, increased leisure time and disposable income. The arrival of television brought us TV chefs and the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, allowing everyone to search through thousands of recipes like the ones you can find on sites such as this. |
