The History of Recipes
It is possible to follow the history of meal recipes back into antiquity, at least as far back into recorded history as the Egyptians, and possibly even further than that. Having said that, generally, these ancient records were just basic pictorial recipes for preparing meals.
Later on, in The time of the romans around 25BC a man called Apicius compiled a collection of documents describing recipes prepared by his fellow Romans. In his scrolls, he recounts how the meals were split into hors d`oeuvres, main course and dessert, a style of dining still practiced today. This early Roman chef tells us how the ancient chefs were skilled in the use of a good variety of aromatic flavours, including a few that will be familiar to modern cooks for example bay, rue and asafoetida. For the decades that followed, the powerful families of Europe competed with each other to serve up the best banquets, and as a consequence, cooks and their recipes increased in prestige. Nevertheless, it wasn`t until the nineteenth century that fine cookery and recipe collections reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, spent years to collecting, trying out, and publishing recipes common in their social group. By the time we get to the 20th century, cooking books were in great demand, due to more people being able to read, people having more free time and a general increase in wealth. |
