The History of Recipes
It is actually possible to trace the history of recipes way back into the far past, in truth as far back into recorded history as the early Egyptians, and potentially, even further back. Interesting though that maybe, generally, these early records were just basic hieroglyphic or cunieform instructions for meal preparation.
The truth of the matter is, the most ancient recipe discovered so far, according to experts in ancient history is a collection of tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated. As we move into Roman times 25BC a roman called Apicius assembled a collection of scripts which described recipes prepared by the Romans. In his works, Apicius recounts how the meals of wealthy Romans were separated into appetizers, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also recounts how the early Romans were skilled in the use of a good variety of spices and herbs, including a few that are still present in modern kitchens for example bay, fennel and dill. As we move on, we have two interesting cookery books from the fourteenth century - a book entitled `Forme of Cury`, and another named `Curye on Inglish`. Despite their titles, these two books are unconnected to the indian curry that is served today, but rather recipes for the types of meals cooked for the rich and wealthy people of the time. Later, in the fifteenth century, knights returning from the crusades brought back many new foods, spices and herbs from middle-east cuisine, including spices like coriander, parsley, and rosemary. The introduction of these new culinary ideas led to a torrent in books on cooking, some of which still exist in private libraries. By the advent of the 20th century, cooking books are increasing in popularity due to higher levels of literacy, people having increased spare time and a general increase in wealth. The revolution that is television brings us celebrity chefs and the spin-off recipe books. Which brings us neatly to the present day and the invention of the internet, permitting everybody to access massive numbers of recipes such as those found on this recipe site. |
