The History of Recipes
Academics have proved the existance of recipes back into distant history, in fact as far back into recorded history as the early Egyptians, and possibly even further than that. Having said that, these, old cook books were just simple hieroglyphic instructions for food preparation.
Fascinatingly, the most ancient recipe in existence, according to Professor Solomon Katz, are some stone tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel blissful. During the time of the Roman Empire a man called Apicius compiled some documents showing how to cook the recipes prepared by his fellow Romans. In his works, Apicius tells us how the meals of wealthy Romans were split into hors d`oeuvres, entrees and dessert, something that is very familiar to us today. Additionally, he tells us how the early Romans were skilled in the use of a good variety of spices and herbs, including some that we all recognise such as basil, fennel and asafoetida. As our culinary historical trip moves on a few more years we have a couple of books dating from the 14th Century - a recipe book titled `Forme of Cury`, and another entitled `Curye on Inglish`. Don`t be fooled by the titles though, these books are nothing to do with the indian food that appears on menues today, but rather accounts of the types of food served to the rich people of the period. In the fifteenth century, knights returning from the crusades brought us many new foods, spices and herbs from Arab countries, such as coriander, parsley, and basil. These new culinary innovations created a surge in publications on food, some of which still exist in private libraries. The introduction of television brought us celebrity TV chefs and the spin-off recipe books. Which brings us neatly to the present day and the invention of computers and the internet, permitting everybody to access massive numbers of recipes such as those found on this recipe site. |
