The History of Recipes
Recipes as a concept can be traced far back into antiquity, at least as far as pharonic Egypt, and maybe further still. However, these, ancient cook books were just very simple hieroglyphic or cunieform instructions for preparing food.
In an interesting twist, the oldest recipe found, according to academics is a collection of clay tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful. Progressing into Roman times 25BC a roman called Apicius wrote some documents describing recipes enjoyed by wealthy roman citizens. In his works, Apicius tells us how the meals of wealthy Romans were separated into starters, entrees and dessert, something that is very familiar to us today. He also describes how the Romans were skilled in the use of a good variety of herbs, including many that are still in use today for example bay, rue and dill. Later on, in the 15th century, people returning from the crusades brought back many foods and spices from the Middle-East, including parsley and basil. These new foods and spices created a torrent in recipe books, some of which are now in private libraries. For the next few years, the powerful and rich competed with each other to offer the most extravagent banquests, and because of this cooks and their recipes were greatly in demand. Nevertheless, it was during the nineteenth century that cookery and recipe publications became popular. Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated their lives to collating, testing, and writing down recipes that were common in the better off homes of the day. By the advent of the twentieth century, cookbooks are in great demand, as a result of higher levels of literacy, more spare time and having more money. The introduction of the TV gave us TV cookery programs and the demand for the spin-off recipe books. Which brings us neatly up to date and the invention of computers and the internet, allowing everyone to search through thousands of recipes like the ones you can find on this web site. |
