Ingredients
3 pheasants-disjointed
2 tsp coriander
1 tsp cumin
2 tbsp sesame seeds
1 tbsp turmeric
1/2 tsp chili peppers
2 cup water
1/4 tsp ginger
2 tsp salt
3 tbsp butter
1 cup onions-sliced
Directions
Pound together the coriander, cumin, sesame seeds, turmeric, chili
peppers, ginger and salt. Rub mixture into pheasant pieces. Melt the
butter in a casserole dish and brown onions in it. Add the pheasant
and any left over spices and brown. Stir in the water; cover and cook
over low heat forty five minutes or until tender. Cover for ten
minutes.

The History of Recipes
It is quite feasible to trace the history of recipes back into the distant past, at least as far as the ancient Egyptians, and maybe further still. However, sadly, these old recipes were just primitive pictorial, hieroglyphic or cunieform recipes for preparing meals.
As we move into Roman times around 25BC a man called Apicius assembled some documents describing recipes enjoyed by wealthy roman citizens. In his works, Apicius describes how the meals were divided into starters, entrees and dessert, a style of dining still practiced today. He also informs us how the cooks of his times made use of many spices and herbs, including some that we all recognise such as bay, rue and asafoetida. During the following few centuries, the powerful families of Europe competed with each other to serve up the most exotic banquets, and as a consequence, the best cooks and their collection of recipes became highly prized. Nevertheless, it was during the 1800s that fine cookery and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated years of their lives to collating, testing, and recording the recipes that were being prepared for the better households. The revolution that is television brought us cooking programs and the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, allowing everyone to search through thousands of recipes like the ones you can find on this site. |
