The History of Recipes
It is quite feasible to follow the history of transcribed cooking instructions way back into ancient history, in truth as far back into history as the Egypt of the Pharoahs, and possibly even further than that. In practice though, in the main part, these old records were just simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
Interestingly, the most ancient recipe discovered so far, according to historians is a collection of tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `exhilarated, wonderful and blissful`. Later on, in Roman times 25BC a roman called Apicius created a few documents which described recipes prepared by wealthy Romans. In his scrolls, he recounts how the meals were divided into hors d`oeuvres, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also describes how the cooks of his times used many herbs, including a few that will be familiar to modern cooks for example thyme, mint and parsley. During the succeeding few hundred years, the upper classes tried to lay on the most exotic meals, and because of this cooks and their collection of recipes were greatly in demand. However, it wasn`t until the nineteenth century the formal cooking and recipe publications became popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to collating, verifying, and publishing the recipes of their peers. By the arrival of the 1900s, cookery books are increasing in popularity mostly as a result of higher levels of literacy, people having more free time and having more money. Like it or not, the introduction of television gave us celebrity chefs and the recipe books that accompanied them. And that pretty much brings us to the present day and the internet revolution, allowing everyone to search through thousands of recipes like the ones you can find on the site you are now reading. |
