The History of Recipes
Historians have proved the existence of recipes back into history, certainly as far back into history as ancient Egypt, and maybe further still. Having said that, mostly, these old cookbooks were just basic pictorial instructions for food preparation.
During the time of the Roman Empire a roman called Apicius compiled some scripts which described recipes cooked by wealthy roman citizens. In his publication, he recounts how the meals of wealthy Romans were split into hors d`oeuvres, entrees and dessert, something that is very familiar to us today. Aspicius also informs us how the early Romans were skilled in the use of many aromatic flavours, including some that we all recognise like thyme, rue and dill. Over the following few hundred years, the rich and powerful families of the West tried to offer the best banquets, and because of this cooks and their recipe collections were highly sought after. Nevertheless, it wasn`t until the 1800s that haute cuisine and recipe publications became popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted much of their lives to collating, trying out, and writing down recipes to allow everyone to enjoy them. By the arrival of the 20th century, cookery books are starting to become popular due to higher levels of literacy, more free time and being a little richer. |
