The History of Recipes

It is actually possible to trace the history of written cooking instructions far back into history, in fact as far into history as ancient Egypt, and quite possibly further than that. Interesting though that maybe, generally, these early records were just very basic hieroglyphic or cunieform recipes for preparing food.

The truth of the matter is, the most ancient recipe discovered, according to Professor Solomon Katz, are some clay tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful and exhilarated.

As we move into Roman times 25BC a roman called Apicius compiled a few scripts which described recipes enjoyed by wealthy Romans. He recounts how the meals of wealthy Romans were separated into starters, main meal and afters, a style of dining still practiced today. He also tells us how the Roman cooks used many different aromatic flavors, including some familiar names like bay, rue and asafoetida.

During the following few centuries, the rich and powerful families of Wesstern Europe tried to serve the most extravagent meals, and as a consequence, chefs and their recipe collections were greatly in demand. However, it was during the 19th century that cooking and recipe collections rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to assembling, trying out, and writing down recipes to help cooks of their time.

By the advent of the 1900s, cookery books were increasing in popularity mostly as a result of more people being able to read, leisure time and being a little richer.

The revolution that is television brings us celebrity chefs and the demand for the accompanying recipe books.

And that neatly brings us to the present day and the invention of computers and the internet, permitting us all to access thousands of recipes like those on sites such as this.
