Ingredients
1 jalapeno peppers
1/4 cup water
1 tsp salt
1 cup vinegar
1/4 cup olive oil
1 tsp mixed pickling spice
Directions
Wash and pack jalapeno peppers tightly into hot jars. Combine
remaining ingreds. in an enameled or glass saucepan and bring to
boil. Cover peppers with boiling liquid, leaving 1/2" head-space.
Seal jars with sterilized 2 pc. canning lids and process in boiling
water to cover by 2" for 10 min. Cool on rack. Store for 30 days
before using.

The History of Recipes
Written cooking instructions as a concept can be found far back into ancient history, at least as far back into history as the Egyptians, and maybe even further. In practice though, sadly, these early records were just very simple hieroglyphic instructions for food preparation.
Progressing into The time of the roman empire around 25BC a roman called Apicius compiled some scripts describing recipes prepared by wealthy roman citizens. In his scrolls, Apicius recounts how the meals were separated into appetizers, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef recounts how the Roman cooks made use of many spices, including some that we all recognise such as basil, rue and dill. Over the following few centuries, the rich and powerful families of the West competed with each other to offer the best banquets, and as a consequence, chefs and their collection of recipes were much in demand. Notwithstanding that, it was during the nineteenth century that fine cooking and cookery books became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to collecting, testing, and writing down popular recipes of the day. When we get to the 1900s, cookery books were in great demand, due to more people being able to read, leisure time and having more disposable income. |
