The History of Recipes
Recipes as a concept can be observed far back into history, certainly as far back as the Egyptians, and quite possibly further than that. Having said that, in the main part, these ancient cookbooks were just very basic pictorial, hieroglyphic or cunieform instructions for food preparation.
Fascinatingly, the oldest recipe discovered so far, according to experts in ancient history is a series of stone tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `blissful`. Progressing into The time of the roman empire around 25BC a roman called Apicius wrote a few documents describing recipes cooked by wealthy roman citizens. In his scrolls, he tells us how the roman meals were separated into hors d`oeuvres, main meal and afters, something that is very familiar to us today. This early Roman chef tells us how the cooks of his times were skilled in the use of a wide range of herbs and spices, including a few that will be familiar to modern chefs such as thyme, fennel and parsley. As our culinary historical trip moves to more modern times we find a couple of interesting recipe books from the fourteenth century - a book called `Forme of Cury`, and another named `Curye on Inglish`. Perhaps surprisingly, these books are unconnected to the curry that appears on menues today, but rather descriptions of the types of food prepared for the rich people of those days. In the 15th century, people returning from the crusades brought back many foods, spices and herbs from Arab cuisine, including coriander, parsley, and rosemary. These new foods and spices caused an eruption in manuscripts on food, some of which are now in academic collections. Over the following few centuries, the powerful and wealthy competed with each other to lay on the best banquets, and because of this the best cooks and their recipes increased in prestige. Nevertheless, it wasn`t until the 19th century that formal cookery and recipe publications rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted much of their lives to assembling, verifying, and publishing the recipes that were being prepared for the better households. When we get to the 1900s, cook books were in high demand, due to higher levels of literacy, more leisure time and a general increase in wealth. The arrival of TV gave us cooking programs and the spin-off recipe books. Which brings us neatly up to date and the invention of computers and the internet, allowing everyone to access massive numbers of recipes just like those on our web site. |
