The History of Recipes
Experts have traced the existence of recipes back into history, in truth as far into history as the Egypt of the Pharoahs, and maybe even further. Having said that, in the main part, these ancient records were just very basic pictorial, hieroglyphic or cunieform instructions for preparing meals.
In fact, the most ancient recipe found, according to Professor Solomon Katz, are a few stone tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful and blissful. Progressing into Roman times around 25BC a man called Apicius assembled a number of documents which described recipes enjoyed by wealthy roman citizens. In his works, he describes how the meals were separated into appetizers, main course and dessert, something we still use today. This early Roman chef informs us how the early Romans were skilled in the use of many spices and herbs, including a few that are still present in modern kitchens for example bay, fennel and dill. Later on, there are a couple of interesting cookery books which were published in the 1300s : one book published under the title `Forme of Cury`, and another, similary entitled `Curye on Inglish`. The titles are somewhat misleading tho`, these two books are not about the indian food that is familiar to us all today, but rather recipes for the types of food eaten by the rich and powerful of the period. Later on in the 1400s, the Crusaders brought back many new foods and herbs from the East, including spices such as parsley, basil and rosemary. These new foods and tastes led to an increase in recipe manuscripts, many of which still exist in private libraries. By the advent of the twentieth century, recipe publications were increasing in popularity mostly as a result of increased literacy, leisure time and being a little richer. |
