Ingredients
1 tbsp lard or oil
1 onion, finely diced
1 cup sauerkraut, chopped
1 cup shredded dill pickles
4 cup chicken stock or low-sodium chicken, broth
1 ham hock
1 salt and pepper, to taste
Directions
HEAT THE OIL IN A SOUP POT, add the onion and cook until soft, about 5
minutes. Add the sauerkraut, pickles, stock and ham hock. Cover,
bring to a boil, reduce heat to low and simmer for 45 minutes. Season
to taste with salt and pepper. Remove ham hock and serve. This soup
is delicious when accompanied by sour cream and some fresh dill.

The History of Recipes
It is possible to read the history of written recipes far back into distant history, certainly as far as the early Egyptians, and potentially, even further back. Interesting though that is, in the main part, these ancient recipes were just very simple pictorial recipes for preparing meals.
The truth of the matter is, the oldest recipe discovered, according to academics are a few stone tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `blissful`. Later on, in The time of the roman empire 25BC a roman called Apicius created some scripts detailing recipes prepared by wealthy roman citizens. In his scrolls, he recounts how the meals were divided into appetizers, entrees and dessert, a style of dining still practiced today. Aspicius informs us how the Roman chefs were skilled in the use of a wide range of aromatic flavours, including a few that will be familiar to modern chefs like basil, rue and dill. Later, in the fifteenth century, people returning from the crusades brought back a variety of foods, spices and herbs from the holy land, including spices like rosemary and coriander. These new foods and tastes led to a surge in recipe publications, many of which still exist in private collections. The arrival of television gave us TV cooks and the accompanying recipe books. And that brings us to the present day and the invention of the internet, allowing us all to access massive numbers of recipes just like those on our site. |
