Ingredients
1 cup cornmeal
3/4 cup cold water
3 1/4 cup boiling water
2 tsp salt
3 tsp margarine or butter
1 cup grated parmesan cheese
1/3 cup shredded swiss cheese (1-1/2 ounces, )
Directions
Heat oven to 350 degrees. Grease 1-1/2-quart casserole. Mix cornmeal
and 3/4 cup cold water in 2-quart saucepan. Stir in 3-1/4 cups
boiling water and the salt. Cook, stirring constantly, until mixture
thickens and boils; reduce heat. Cover and simmer 10 minutes,
stirring occasionally; remove from heat. Stir until smooth.Spread
one-third of the mixture in casserole. Dot with 1 teaspoon of the
margarine. Sprinkle with 1/3 cup Parmesan cheese. Repeat twice.
Sprinkle with Swiss cheese. Bake uncovered 15 to 20 minutes or until
hot and bubbly. 6 SERVINGS (ABOUT 3/4 CUP EACH); 125 CALORIES PER
SERVING.

The History of Recipes
It is possible to track the history of written recipes far back into antiquity, at least as far as the ancient Egyptians, and potentially, even further back. Having said that, these, early cookbooks were just very basic hieroglyphic instructions for preparing meals.
Later on, in The time of the romans around 25BC a roman called Apicius wrote some scripts describing recipes enjoyed by wealthy roman citizens. This early Roman chef informs us how the ancient cooks made use of many aromatic flavors, including a few that will be familiar to modern chefs for example thyme, rue and parsley. Later on in the 1400s, people returning from the crusades brought back many spices and herbs from middle-east cuisine, including spices like coriander, parsley, and basil. These new culinary innovations prompted an outbreak in cookery books, many of which are now in private cookery archives. The arrival of television gave us cooking programs and the accompanying recipe books. And that brings us to the present day and the invention of the internet, allowing everyone to search through massive numbers of recipes like the ones you can find on sites such as this. |
