Ingredients
1 lb mushrooms, fresh, *
1 cup onion, chopped
3 tbsp butter
2 cup hard rolls, 2 or 3
1/2 cup milk
3 each eggs, lightly beaten
3 tbsp parsley, chopped fresh ground pepp
1/2 cup breadcrumbs, more if needed
1 butter, as needed for sauteing cu
Directions
Chop the mushrooms in a large frying pan, saute them with the
onions in 3 tbsp of butter.
Soak the cubed hard rolls in milk for about 10 minutes. Add to the
mushroom-onion mixture. Blend in the eggs, parsley, salt and pepper.
Form the mixture into cutlet-shaped patties, each patty should take
3 to 4 tablespoons of the mixture. Press the patties onto the
breadcrumbs.
Fry in butter until crisp and brown on both sides. Variation: You
could substitute dried mushrooms for part or all of the fresh
mushrooms. They are a favorite among the Polish for their rich and
interesting flavor."

The History of Recipes
We are able to trace the history of written recipes back into history, at least as far back as early Egypt, and maybe even further. However, in the main part, these old records were just very simple pictorial, hieroglyphic or cunieform recipes for meal preparation.
The truth of the matter is, the oldest recipe found, according to experts in ancient history are some clay tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful and blissful. As we move into Roman times 25BC a man called Apicius compiled a few documents detailing recipes enjoyed by his fellow Romans. In his works, he describes how the meals were split into appetizers, entrees and afters, a very modern way of dining. Aspicius describes how the ancient chefs used a good variety of aromatic flavours, including a few that are still present in modern kitchens such as basil, mint and dill. In the 15th century, the Crusaders brought back many spices and herbs from middle-east cuisine, including spices like coriander, parsley, basil and rosemary. The introduction of these new herbs and spices led to an outbreak in cookery books, most of which are kept safe in private cookery archives. Over the next few centuries, the powerful families of Europe competed with each other to lay on the most exotic meals, and because of this the best chefs and their collection of recipes were much in demand. Even so, it was during the 1800s the formal cooking and recipe books became popular. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, devoted their lives to assembling, testing, and recording recipes to allow everyone to enjoy them. The introduction of television brought us cooking programs and the recipe books that accompanied them. And that brings us to the present day and the internet revolution, allowing everybody to access thousands of recipes just like those on this web site. |
