Ingredients
1 lb mushrooms, fresh, *
1 cup onion, chopped
3 tbsp butter
2 cup hard rolls, 2 or 3
1/2 cup milk
3 each eggs, lightly beaten
3 tbsp parsley, chopped fresh ground pepp
1/2 cup breadcrumbs, more if needed
1 butter, as needed for sauteing cu
Directions
Chop the mushrooms in a large frying pan, saute them with the
onions in 3 tbsp of butter.
Soak the cubed hard rolls in milk for about 10 minutes. Add to the
mushroom-onion mixture. Blend in the eggs, parsley, salt and pepper.
Form the mixture into cutlet-shaped patties, each patty should take
3 to 4 tablespoons of the mixture. Press the patties onto the
breadcrumbs.
Fry in butter until crisp and brown on both sides. Variation: You
could substitute dried mushrooms for part or all of the fresh
mushrooms. They are a favorite among the Polish for their rich and
interesting flavor."

The History of Recipes
We can track the history of meal recipes way back into antiquity, in truth as far into history as the early Egyptians, and maybe even further. However, sadly, these ancient cook books were just simple hieroglyphic or cunieform instructions for preparing food.
The truth of the matter is, the oldest recipe discovered so far, according to Professor Solomon Katz, are some stone tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `exhilarated, wonderful and blissful`. As we move into Roman times around 25BC a roman called Apicius wrote a collection of documents detailing recipes enjoyed by wealthy roman citizens. In his works, he tells us how the roman meals were split into hors d`oeuvres, main course and afters, something that is very familiar to us today. Aspicius describes how the chefs of Roman times used a good variety of spices and herbs, including some familiar names such as basil, rue and asafoetida. Later, in the 15th century, people returning from the crusades brought back a variety of foods, spices and herbs from Arab cuisine, including basil and coriander. The introduction of these new tastes created an increase in cookery books, some of which are kept safe in private libraries. By the advent of the 1900s, cookbooks are highly popular due to higher levels of literacy, more leisure time and being a little richer. The revolution that is television gave us TV cooks and the spin-off recipe books. And that brings us to the present day and the internet revolution, allowing everybody to access thousands of recipes such as those found on this site. |
