The History of Recipes
Academics have traced the existence of recipes back into antiquity, in truth as far as ancient Egypt, and maybe further still. Interesting though that is, in the main part, these early cookbooks were just very simple pictorial, hieroglyphic or cunieform instructions for food preparation.
Interestingly, the most ancient recipe found, according to experts are a few tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `exhilarated, wonderful and blissful`. Progressing into The time of the romans around 25BC a man called Apicius compiled a number of scripts which described recipes cooked by the Romans. In his publication, Apicius recounts how the meals were split into hors d`oeuvres, main course and dessert, something that is very familiar to us today. Additionally, he describes how the chefs of Roman times made use of many different herbs and spices, including a few you will know like bay, rue and asafoetida. Later, in the 15th century, knights returning from the crusades brought us many new foods, spices and herbs from the Middle-East, including spices such as rosemary and coriander. These new spices and herbs created a torrent in manuscripts on food, some of which still exist in private collections. By the time we get to the twentieth century, recipe publications are starting to become popular due to increased literacy, leisure time and disposable income. Like it or not, the introduction of TV brought us celebrity TV chefs and the spin-off recipe books. Which brings us neatly to the present day and the invention of computers and the internet, allowing everyone to search through massive numbers of recipes like those on our web site. |
