Ingredients
1 8 oz can tomato sauce
1/2 cup picante sauce
1 tsp ground cumin
1/2 tsp garlic salt
1/2 tsp oregano, crushed
2 whole chicken breasts, boned, skinn, ed and split
1 salt and pepper as desired
2 medium onions, cut into 1/2 wedges
2 tbsp vegetable oil
2 cup zucchini, cut into 1/2 cubes(about, 1 medium zucch

Combine tomato sauce, picante sauce, cumin, garlic salt and oregano;
mix well. Cut chicken into 1" pieces; sprinkle with salt and pepper.
Cook chicken and onions in oil in large skillet over medium heat,
stirring frequently, until chicken is lightly browned and almost
cooked through, about 5 to 7 minutes. Stir tomato sauce mixture into
skillet; mix well. Stir in zucchini. Cover and simmer 5 minutes.
Uncover; cook and stir about 1 minute to thicken sauce, if necessary.
Serve with additional picante sauce. Serves 4.

The History of Recipes
Recipes as a concept can be observed way back into distant history, at least as far as the early Egyptians, and maybe further still. Interesting though that maybe, these, early cookbooks were just very simple hieroglyphic or cunieform recipes for meal preparation.
Fascinatingly, the oldest recipe found, according to academics are some ancient tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `blissful`. Progressing into The time of the roman empire around 25BC a roman called Apicius assembled a number of documents describing recipes enjoyed by wealthy roman citizens. In his scrolls, Apicius tells us how the roman meals were split into starters, entrees and desserts, a very modern way of dining. Additionally, he recounts how the ancient cooks used many herbs and spices, including a few that are still present in modern kitchens for example thyme, rue and dill. Over the following few centuries, the upper-class families of the West competed with each other to serve up the best banquets, and as a result the best cooks and their recipe collections were much in demand. Even so, it was during the 1800s that cookery and recipe books reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated their lives to collating, verifying, and recording recipes of the day. The arrival of TV brings us cooking programs and the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, allowing everyone to search through thousands of recipes like the ones you can find on our web site. |
