Ingredients
10 cup chicken broth
CHICKEN BALLS
1 lb raw lean ground chicken
2 slice whole grain bread, crumbled
3 tbsp parmesan cheese, grated
2 tbsp fresh parsley
1 egg, lightly beaten
1 tsp garlic, minced
1 tsp lemon rind, grated
1/4 tsp nutmeg, grated
1 salt and pepper to taste
GARNISH
1 freshly grated parmesan
1 chopped fresh parsley
Directions
1. In a mixing bowl combine the chicken ball ingredients and mix
together with your hands until well-combined. Form into balls the
size of walnuts.
2. Bring the broth to a full boil, carefully drop in the balls,
cover, reduce heat, and simmer for 6 to 7 minutes, or until just
tender but not overcooked.
3. Serve the soup hot, garnished with a light sprinkling of Parmesan
cheese and freshly chopped parsley.
Lean turkey can be substituted for the chicken.

The History of Recipes
It is quite possible to track the history of written cooking instructions way back into the far past, in truth as far into history as pharonic Egypt, and quite possibly further than that. In practice though, mostly, these early cook books were just primitive pictorial recipes for food preparation.

Continuing our culinary historical journey, we have two interesting cookery books which date from the 1300s ; a recipe book published under the title `Forme of Cury`, and another, similary named `Curye on Inglish`. Amusingly, they are not about the indian curry that is familiar to us all today, but rather accounts of the types of meals on the menus of the upper classes of that period. Over the succeeding few hundred years, the wealthy families of Europe tried to lay on the most exotic meals, and because of this cooks and their recipe collections became highly prized. Even so, it was during the nineteenth century that cookery and recipe books rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated years of their lives to collecting, trying out, and recording recipes common in their social group. When we get to the twentieth century, recipe books were increasing in popularity mostly due to higher levels of literacy, more free time and disposable income. |
