The History of Recipes
Historians have traced the existance of recipes back into the distant past, at least as far into history as early Egypt, and possibly even further. Having said that, sadly, these old records were just basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
Interestingly, the most ancient recipe discovered, according to food historians is a series of clay tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated and blissful. Later on, in Roman times 25BC a roman called Apicius compiled a few documents showing how to cook the recipes cooked by the Romans. In his publication, Apicius describes how the roman meals were divided into hors d`oeuvres, entrees and dessert, a very modern way of dining. Additionally, he tells us how the ancient chefs made use of a good variety of spices and herbs, including a few that will be familiar to modern cooks such as basil, mint and dill. Closer to modern times, there were some interesting books dating from the 14th Century - a cookery book called `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Surprisingly, these books have no connection with the indian food that we all know today, but rather recipes for the types of food on the menus of the nobility of the period. In the fifteenth century, people returning from the crusades brought us a variety of spices and herbs from the holy lands, such as coriander, parsley, and basil. These new herbs and spices created an outbreak in recipe publications, most of which still exist in private libraries. By the arrival of the 1900s, cookery publications are greatly in demand mostly due to better eduction, people having more free time and having more money to spend. Like it or not, the introduction of television brings us TV chefs and the accompanying recipe books. Which pretty much brings us up to date and the invention of computers and the internet, permitting us all to search through massive numbers of recipes such as those found on this site. |
