The History of Recipes
It is quite feasible to follow the history of written cooking instructions back into history, in fact as far into history as pharonic Egypt, and quite possibly further than that. In practice though, mostly, these early records were just simple hieroglyphic or cunieform instructions for meal preparation.
Interestingly, the most ancient recipe in existence, according to food historians are some ancient tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `exhilarated, wonderful and blissful`. Closer to modern times, there are some books published in the fourteenth century ; a book titled `Forme of Cury`, and another, similary called `Curye on Inglish`. The titles are a little misleading though, they have no connection with the indian curry that we all know today, but rather descriptions of the types of food eaten by the rich and wealthy people of that period. Over the succeeding few centuries, the upper-class families of Wesstern Europe competed with each other to serve up the best banquets, and as a result the best chefs and their collection of recipes were much in demand. However, it was during the 1800s that formal cookery and recipe collections became really popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated years of their lives to assembling, trying out, and recording the recipes of their peers. When we get to the twentieth century, cooking books are in high demand, due to increased literacy, people having increased leisure time and having more disposable income. |
