The History of Recipes
Transcribed cooking instructions as an idea can be found far back into ancient history, certainly as far back into recorded history as the Egyptians, and maybe even further. Having said that, sadly, these early records were just simple pictorial, hieroglyphic or cunieform recipes for food preparation.
In an interesting twist, the oldest recipe discovered, according to experts are a few stone tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful. Continuing our culinary historical journey, there were a couple of cookery books from the 1300s ; a recipe book published under the title `Forme of Cury`, and another entitled `Curye on Inglish`. Perhaps surprisingly, these two books are nothing to do with the indian food that appears on menues today, but instead descriptions of the types of meals enjoyed by the nobility of the period. Over the succeeding few hundred years, the upper classes competed to serve the best banquets, and consequentially chefs and their recipe collections became highly prized. Nevertheless, it was during the 1800s that fine cookery and recipe publications rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted much of their lives to collating, trying out, and recording recipes for their fellow cooks to enjoy. When we get to the twentieth century, cookery books are highly popular due to better eduction, leisure time and disposable income. |
