The History of Recipes
Transcribed cooking instructions as an idea can be tracked far back into the far past, at least as far into history as early Egypt, and possibly even further. In practice though, these, old records were just very basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
Fascinatingly, the oldest recipe discovered so far, according to experts is a collection of stone tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful. Progressing into The time of the roman empire around 25BC a man called Apicius created some scripts showing how to cook the recipes prepared by wealthy Romans. In his scrolls, he describes how the meals were separated into hors d`oeuvre, main course and dessert, something we still use today. Aspicius tells us how the cooks of Roman times were skilled in the use of a good variety of spices, including some familiar names like bay, fennel and parsley. In the 15th century, knights returning from the crusades brought back many new foods, spices and herbs from the East, such as coriander, parsley, and basil. These new foods and tastes caused an increase in recipe publications, most of which are now in academic collections. The arrival of TV brings us celebrity TV chefs and the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing everybody to access massive numbers of recipes such as those found on this recipe site. |
