The History of Recipes
It is quite feasible to prove the history of recipes back into history, at least as far into history as the Egyptians, and possibly even further than that. Interesting though that maybe, sadly, these ancient recipes were just basic pictorial recipes for meal preparation.
Interestingly, the oldest recipe found, according to Professor Solomon Katz, are some stone tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `exhilarated, wonderful and blissful`. During Roman times 25BC a man called Apicius compiled a number of scripts detailing recipes cooked by wealthy roman citizens. In his works, Apicius recounts how the roman meals were separated into hors d`oeuvre, entrees and afters, something we still use today. Aspicius recounts how the ancient Romans used a wide range of aromatic flavors, including a few you will know like thyme, mint and parsley. Closer to modern times, there are two recipe books from the 14th Century - one book titled `Forme of Cury`, and another, similary called `Curye on Inglish`. Amusingly, these are nothing to do with the spicy food that is familiar to us all today, but rather accounts of the types of food prepared by the cooks of the rich and powerful of the time. Later, in the 15th century, knights returning from the crusades brought us many foods, spices and herbs from the East, such as coriander, basil and rosemary. These new spices and herbs caused an outbreak in manuscripts on cookery, most of which still exist in private cookery archives. By the time we get to the twentieth century, recipe publications are in great demand, due to increased literacy, people having more free time and being a little richer. |
