The History of Recipes
Transcribed cooking instructions as a concept can be observed far back into distant history, at least as far as the ancient Egyptians, and quite possibly further than that. Interesting though that is, sadly, these ancient cook books were just very basic hieroglyphic instructions for preparing meals.
Much later, in Roman times a roman called Apicius wrote a collection of documents describing recipes enjoyed by wealthy roman citizens. In his scrolls, he describes how the meals were separated into hors d`oeuvres, main meal and desserts, a style of dining still practiced today. Aspicius also describes how the chefs of Roman times were skilled in the use of a good variety of aromatic flavours, including a few that will be familiar to modern cooks for example thyme, mint and parsley. Later on, in the 15th century, people returning from the crusades brought back many spices and herbs from Arab cooking, including basil and coriander. These new foods and tastes caused an eruption in books on cooking, many of which are now in private collections. When we get to the twentieth century, cookbooks are in high demand, mostly due to more people being able to read, more leisure time and a general increase in wealth. |
