The History of Recipes
We can track the history of meal recipes way back into ancient history, in truth as far as ancient Egypt, and possibly even further than that. Having said that, sadly, these old cook books were just very basic hieroglyphic or cunieform recipes for meal preparation.
In fact, the most ancient recipe discovered, according to historians are a few stone tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated. Progressing into The time of the roman empire 25BC a man called Apicius compiled some documents which described recipes prepared by wealthy Romans. In his works, Apicius tells us how the meals were divided into starters, main meal and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he tells us how the cooks of his times made use of a wide range of aromatic flavors, including a few that will be familiar to modern chefs for example bay, rue and asafoetida. Later, we have two interesting cookery books which date from the 14th Century ; one book published under the title `Forme of Cury`, and another titled `Curye on Inglish`. Amusingly, they are unconnected to the indian curry that is served today, but instead recipes for the types of food prepared by the chefs of the upper classes of that time. Later on in the 1400s, knights returning from the crusades brought us many new spices and herbs from the holy lands, such as parsley and basil. These new spices and herbs was responsible for an eruption in books on cookery, the majority of which are now in private collections. By the time we get to the 20th century, recipe books were increasing in popularity mostly due to better eduction, more free time and having more money. |
