The History of Recipes
Written cooking instructions as an idea can be found back into distant history, in fact as far back into history as early Egypt, and quite possibly further than that. Interesting though that maybe, mostly, these old cookbooks were just very simple hieroglyphic or cunieform recipes for preparing meals.
As we move into The time of the roman empire around 25BC a man called Apicius compiled some documents showing how to cook the recipes enjoyed by wealthy roman citizens. In his works, Apicius tells us how the roman meals were divided into starters, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also informs us how the Romans made use of a wide range of herbs and spices, including a few that will be familiar to modern cooks such as thyme, rue and asafoetida. Over the next few hundred years, the wealthy families of Europe strove to serve the most extravagent meals, and as a result the best chefs and their collection of recipes were greatly in demand. Even so, it was during the nineteenth century that fine cookery and cookery books really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated years of their lives to assembling, verifying, and publishing recipes for their fellow cooks to enjoy. The arrival of TV brought us TV chefs and the demand for the accompanying recipe books. Which brings us neatly to the present day and the invention of the internet, permitting everybody to search through thousands of recipes just like those on our web site. |
